Hello! My name is Gillian, I’m a second year student at COA. I’m originally from Ann Arbor, Michigan, but I’ve spent the last 10 years working in restaurants as a line cook, bread baker, and restaurant purchaser. I enrolled in school last year to further my education on food systems through the lens of economics, history, and policy. I still enjoy cooking and baking, especially now that I can share it with the people I love when I choose to.

While at COA I have dived head first into food systems classes, but am also enjoying economics, philosophy, and math courses. I especially enjoy writing analytical or argumentative essays, it’s so satisfying to prove a strong point. I have enjoyed supporting other students as we work through problems together and share ideas, there is so much to learn from each other.
